- 1 ripe pineapple, cut into spears
- Bamboo skewers
- 1/2 cup brown sugar
- 1/2 cup butter
- 1 teaspoon cinnamon, plus more for sprinkling
- 1/2 teaspoon grated nutmeg (optional)
Directions
- Prepare the pineapple: Slice or twist off the leaves. With a serrated knife, trim about 1/2 inch from both ends so the pineapple sits flat. Stand it on one end and slice off the skin, staying as close to the skin as possible. Remove any remaining eyes with a melon baller or paring knife. Quarter the pineapple lengthwise, remove the core, and cut each section into spears.
- Skewer: Slide a bamboo skewer through each pineapple spear. Place the skewers in a metal pan that fits on your grill.
- Make the sauce: Lightly sprinkle the pineapple with cinnamon. Melt the butter, then whisk it together with the brown sugar, cinnamon, and optional nutmeg. Pour over the pineapple and let the skewers soak for at least 5 minutes.
- Grill: Grill over medium heat for 7–10 minutes, until beginning to turn golden brown. You can keep the skewers in the pan or place them directly over the fire.
- Serve: Brush any sauce that collected in the pan back over the pineapple before serving.
