- 2 large skinless, boneless chicken breasts, butterflied (cut in half lengthwise to make 4 thinner pieces)
- Salt and black pepper, to taste
- Flour, for dredging
- 6 tablespoons butter, divided
- 5 tablespoons olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped
Directions
- Pat the chicken dry with a paper towel. Season with salt and pepper to taste. Dredge the chicken in flour and shake off any excess.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter with 3 tablespoons of olive oil. When heated, add 2 pieces of chicken and cook for 3 minutes. When browned, flip and cook the other side for 3 minutes. Transfer to a plate. Cook in batches if necessary, adding more butter and oil as needed. Remove all chicken from the pan and set aside.
- Without cleaning the pan, add the lemon juice, stock, and capers. Bring to a boil, scraping up the browned bits from the pan for extra flavor. Taste and adjust the seasonings if needed.
- Return the chicken to the pan and simmer for 5 minutes.
- Place the chicken on a serving platter or individual plates.
- Add the remaining 2 tablespoons of butter to the sauce in the skillet and whisk. Pour the sauce over the chicken and garnish with parsley.
