- 1/3 cup plain breadcrumbs
- 1/2 cup milk (water or beef broth may be substituted)
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground beef
- 1 pound ground pork
- 2 eggs
- 1/4 bunch fresh parsley, chopped
- 3 cloves garlic, crushed
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 1/2 teaspoons dried Italian herb seasoning
- 2 tablespoons grated Parmesan cheese
Directions
- Cover a baking sheet with foil and spray lightly with cooking spray, or use a silicone baking mat.
- Soak the breadcrumbs in the milk, water, or beef broth in a small bowl for 10 minutes.
- Heat the olive oil in a skillet over medium-high heat. Cook and stir the onion until translucent, about 5 minutes.
- Mix the beef and pork in a large bowl. Stir in the onion, soaked breadcrumbs, eggs, garlic, parsley, salt, black pepper, Italian seasoning, and Parmesan with a rubber spatula until combined.
- Cover and refrigerate for about 1 hour.
- Preheat the oven to 425°F. Using wet hands, form the mixture into balls about 1 1/2 inches in diameter and arrange them on the prepared baking sheet.
- Bake until browned and cooked through, about 15–20 minutes.
